Happy Christmastide.
Decadent orange chocolate truffles – they are dangerously good!

Recipe type: Candy
Serves: 25-30
Ingredients
- ⅓ cup heavy cream
- 6 tablespoons unsalted butter, cut into small pieces
- 2 cups high quality semi-sweet chocolate, chips or chopped
- ¾ teaspoon orange extract
- 1 – 2 cups pecans, finely chopped
Instructions
- In a small saucepan over medium-low heat, bring the heavy cream to a simmer. Do not boil! Add the unsalted butter, stir until melted. Add the semi-sweet chocolate and stir until mixture is smooth and glossy. Remove from heat and whisk in orange extract. Pour mixture into a large, shallow bowl. Let cool, then refrigerate for at least 2 hours.
- Once mixture is properly chilled, it is time to roll! Place pecan pieces in a bowl. Line a baking sheet with parchment paper. Using a cookie scoop or melon baller, scrape the chocolate mixture until you get a one inch ball. Roll each ball into the pecan pieces until coated. Place on baking sheet. Repeat until all of the chocolate mixture has been used.

Ultra Alexander
Ingredients
Ice
2 ounces brandy
2 ounces chocolate liquor
1 tbsp whipping cream
1 tbsp chocolate syrup
Optional garnish
Cocoa powder
Chocolate shavings
Get out your best cocktail shaker and fill to the top with ice. Cover with brandy, liquor, whipping cream and syrup. Shake it like a polaroid picture, strain and serve in a glass. Since this recipe makes one serving, it’s up to you if you want to rim your glass with cocoa, or top your cocktail with chocolate shavings.
Sometimes, a good night out leads to new friendships. While tequila may be a bad influence, the Ultra Alexander will surely make you feel great. Full, but great.

Sweet and Beautiful November
It's hard to believe this is the last day of November. I planned to post more often this month, but it was a very busy month-family visiting, my Mom's birthday (Nov. 14), my birthday (Nov. 19), Thanksgiving, etc. The entire month was gorgeous. Nothing but sunshine, blue skies and beautiful colors. Our Pecan harvest was wonderful and we are getting ready to harvest our citrus trees. I took some pictures, but I still need to upload them. I still need to post pics from October, as well. Time truly gets away from me.
The farmers are busy harvesting the sugarcane. Harvesting won't end until the beginning of January.
I'm drinking a Pumpkin Ale. I raise it to the month of November. :)
